Spinach-Celery Soup |

This easy homemade soup is delicious and very satisfying. It is composed of readily available ingredients and makes a fine prelude to a lunch or dinner.
Ingredients
1 bunch spinach
2 stalks celery, thinly sliced
1 carrot, peeled and chopped
6 green onions, thinly sliced
2 Tbsp. butter or margarine
2 cans(10oz.each)chicken broth
1 cup whipping cream
1/2 tsp dried chervil leaves
2 Tbsp. lemon juice
1 Tbsp. chopped fresh parsley
Lemon slices for garnish
Directions
Wash and stem spinach. Chop leaves Set aside.
In saucepan, saute celery, carrot and onions in the heated butter for 3 to 5 min., stirring. Add chicken broth. Remove from heat. Puree mixture in blender.
Combine pureed mixture and spinach leaves in saucepan. Bring to a boil Add cream and chervil. Reduce heat Simmer 10 to 15 min.
Stir in lemon juice. Pour into soup bowls. Sprinkle with parsley. Garnish with lemon slices before serving.
